So my beer is bottled, primed, and sat in the warm now. fermentation has definitely finished, so I would say its time for the cool stage.

Can someone tell me if I put these bottles in the fridge for a few weeks so the co2 absorbs into the beer, will it remain absorbed if they are moved to room temperature after, or am I pissing in the wind? I'm not majorly fussed about it usually, but this is for a competition... :)

There's so little headspace in the bottle there's no place for it to go but in the beer. When I warm back up to room temp and then open without chilling, that can be a bit fizzy. But once they are conditioned and you have the volume of CO2 that you primed for, you should be set.
