Potassium metabisulphate questions

I wonder if anyone can advise me please.
I'm currently fermenting a California Connoiseur Cabernet Merlot 1 gallon kit.
The problem is I forgot to add the sachet of Potassium
Metabisulphate but put in a sachet of potassium sorbate in by mistake.
Is the process ruined now or can it be rescued?

Yes I think it had stopped, there had been no bubbles for a few days now, I thought potassium metabisulphate was the fermentation stopper?
 
sorbate stops the yeast reproducing, the sulphate helps stop oxidizing, what was your FG? you can still add the sulphate and degas, then your finings
 
Sounds like you're safe. If it tastes good it is good =D
You are right to an extent, metabisulphite is found in wine stabiliser along with pot sorbate, sulphite kills of much of the yeast and the sorbate stops the rest reproducing.
 
Thanks everyone for the advice .
I plan to leave it 2 days as the instructions then add the fining agent.
