Hello all
I'm looking to make a beer which requires post hopping. Books tell me to apply the hops at 80 degrees. Do I have to let the wort cool down naturally from that point or can I use my cooler to bring down the temperature?

Can I apply the cooler after applying post hops or do I need to let it steep for a while?
 
Normal practice is to let them steep for 15-20 mins then continue cooling.

Calum, I have read that letting it cool to 80c ish helps keep more of the aroma. How true that is I don't know.
 
I've read that some brewers add flameout hops once the wort has cooled to 80C. I use a no-chill cube so dont want the wort to cool too much so I add the hops at flame out (or mains off). Whether waiting for the wort to cool a bit would give more flavour or aroma I don't know.
 
At temperatures above 80 degrees, the vast majority of aromatic components of the hops are boiled off. By adding them at lower temperatures they are in theory retained and you will get more perceptible aroma in the beer.
I did a beer last month where I cooled and steeped for 40 minutes with galaxy hops and I've been very pleased with the result. There is definitely a lot more aroma there :D
