4L Lidl Pomegranate Juice Drink
1kg Granulated Sugar
2 tsp Pectolase
1 tsp Yeast Nutrient
1 tsp General Purpose Yeast

Mix everything in a DJ. (OG was 1.120)
After a few days top up to neck of DJ.
Leave to ferment out. (FG was 1.020)

Just had a sneak preview of this while taking the FG. At first I was rather concerned that it had stopped fermenting at 1020 but after a small sip I'm really glad it did. Its got a real hit of pomegrante (no surprise) and a nice level of sweetness. It hits the stomach with the pleasant warmth of a good port/sherry, odd considering the ABV is only about 11.5% (if my rough calculations are correct).

I'm hoping it doesn't change much as it matures.

How's this one going now? How is the colour?

I'm liking making up different juice wines and have a few Dj's with what looks like liquid jewels in them.

Gone through 3 of the 6 bottles so far with several people to assist. It's definately one of those no waiting required brews.

It's been described as a sweet sherry or a mild Southern Comfort taste.

The colour is amber, perhaps a shade more towards red. I'm not so good with colours, being a bloke I can only differentiate about 16 colours. I'm sure someone knowledgable would describe it as a umber or burnt cinnamon.

I'll ask SWMBO as she sometimes get those odd paints 'West African Clay with a hint of elephant droppings in the hours before dawn during the midsummer equinox' known to me as reddish brown.

:D I like it.

I know someone who would like a bottle or two of that so it's one for me to make a note of. I have 2 litres of Prince's apple, raspberry, and pomegranate juice drink "in stock" which I'm thinking about how to use. I've not tried making a dessert wine yet.
