This may sound silly, but is there a specific In and Out on the plate chiller? I ran water through it and it didn't seem to matter which direction I was sending it through the thing.

For best results it's better to have the water running in opposite direction to the hot Wort.

Some plate chillers have "ports" that are two different sizes. If you are asking about this there appears to be no difference whatsoever. I have one like this and have tried it both ways and the result was the same. Otherwise the advice above is very important hot wort in opposite to cold water in.

May sound silly but mount it vertically and have the wort going in the bottom and out of the top . . . coolant going the other way . . . it eliminates all the air pockets :)

Only thing I would add is use the 'clean side' ports for the wort and the ' central heating side' ports for the cooling water if you are up-cycling an old combination boiler plate heat exchanger .

I have mine mounted horizontally on its side, it suits my gravity fed system better, the principle is the same though.
