I am going to make a coopers Mexican cervesa kit, but instead of adding sugar,dried extract or bke, was thinking of mashing up 2-3kgs of pale malt instead. What amount would anyone recommend? And any adittional hops(bearing in mind it's just a lager) any additional instructions?
 
If you are going to be mashing that amount of grain (and boiling afterwards to drive off any nasties such as DMS) then I would hang the kit and just do an all-grain pale ale!

With the right hops - Saaz etc - and a clean yeast like S05 you could get a lager-type brew at beer brewing temperatures anyway - 3.5kg of grain will get you a 3.5%ish brew, similar to the Cervesa.

I would do the kit separately with 500g light DME and 500g sugar, brewing short to 21L rather than use it as a base for an allgrain brew...use it as a shelf-filler!
 
No worries!

Dimethyl Sulphide. Sort of a cooked veg smell and taste - it's a byproduct of mashing the grain, but boiling it without a lid on for 60mins gets rid of a large proportion of it.

You don't need to do it with malt extract, as the condensing/drying process removes it.
