Depends how warm your room is doesn't want to be too hot or cold

I've got an immersion heater similar to those used in a fish tank its set @ ~ 22 deg C = ~ 72 deg farenheit

Yeast pitched @ ~ 25 deg C works nicely = ~ 77 deg farenheit

I stick to those temps and my brews have done well so far :thumb:

Well I just ferment at room temp (unless it is too high then a water bath to cool it) so anywhere between 12-22deg. Never had any issues.

I find that Safale-04 ferments out in about 2-3 days Nottingham likes 5 days at these temps.

Anyway I always thought it was 18deg for Ale and 22deg for wine? :wha:

Why bother to wrap it up? IF you have a good yeast head you may get a froth out, where it tries to make a bid for freedom :D
And if you have it wrapped up then you have more cleaning to do...

I brewed yesterday (a Tomcat ish brew I am testing) and it is sitting bubbling away with a good head on it (Bubbling visible as the head pushes up with the gas not under airlock, I like to open ferment with just a piece of kitchen roll on top to keep BrewLab hairs/flies out)

Just have to finish the 15 pints in my barrel before Thursday to transfer it in to it :) Life's hard
