Overnight Mashing

I have never done an overnight mash but reckon that i could brew two days back to back with an overnight mash utilizing the hot water from my chiller. As amny of you know I will be brewing at work so I would have to get a mash on at 5 pm and realistically not get sparging until 9.30 the next morning.

If I mash over night obviously the wort is going to cool, I usually loose 1 degree over an 1 1/2 hour mash, so do I need to mash slightly higher to compensate?

Any thoughts greatly appreciated

why does the mash need to be at the same temp in the morning? the sacharification process would have already completed in 90 minutes. by starting with a higher than desired mash temp you will change the beer profile and reduce the potential extract.
 
we have done a couple of overnighters and the temp only dropped by 6 degrees over nearly 9 hours in a thermobox. Also noticed that efficiency increased a little too
 
Thanks for that Mark. Did you start out at your normal Mash temp or did you go a couple of degree's higher?

I understand now (since posting) that it doesn't matter what temp it ends up after saccrification has taken place as long as it doesn't drop below 50 as bacteria can quickly take over producing off flavours.

I suppose I am just going to have to try it. :shock: :shock:
 
Thats ok most of my beers are ending up a good 5-10 points higher anyway at the moment :lol: :lol: and I was planning on using it for higher gravity beers anyway. :thumb: :thumb: :thumb:

My reasoning was that i didn't know whether when the temp dropped the enzymes then started to convert more of the unfermentables into fermentables and you end up with a more fermentable wort, which is not what i would want.

I do have a similar needs myself as I like to play golf on Saturday morning and it is a struggle to fit a brewday in after that. I use a herms setup with a PID with ramp / soak options and alarm relays.

This means I can set the mash up first thing and then run a preset program that steps the mash through the required temperatures and holds for the required time - this is really useful for step mashes but still useful for unattended single step mashes.

Once the mash tun is filled with grain and warm water, I press "start" and then go to golf. In that time it will step up to 66oC for instance for a couple of hours (I allow a 30 minute lag for the whole tun to reach the temperature of the herms) and then mash out at 77oC for 30 minutes and use the alarm relay to switch off the the herms. When I get back I then get the sparge and the boil going.

If I wanted to do this overnight, I guess I could have the herms bring the liquor from cold to mash temp over time or have an initial step that does nothing for a few hours ?

The PID was not particularly cheap and I did a few attended dry runs to work out lag times before being brave enough to leave it running unattended, but I am really pleased with it now - it gives me back a lot of time.

When I get home I'll add some pics if you like.
