Organic Stout

So I've got the bits to build a mash tun, I think I want to start by making a stout for winter supping.

I want to use organic stuff if I can, anyone know if I can put together a stout from these grains?

It'd be nice to buy local grown stuff, but god knows where I'd get malt from round here.

A stout usually requires roasted barley and flaked barley. If you can get organic porridge oats then you could make an oatmeal stout but you will still need the roasted barley and some flaked. Choclate malt isn't dark or bitter enough for a stout. You could make a nice barley wine or porter from that lot though.
