Ordered Sanitizer by mistake will it be okay?

How long will Sanitizer last. Say I clean everything then sanitize will it be okay a week later before brewing?

If there are no contaminants that get into your kit after it's cleaned and air dry you'll be ok. But bacteria multiply very quickly. That's why in professional kitchens, if something is accidentally left at room temperature for 2 hours, it goes in the bin.

I'd clean and then use, unless you're really careful with storage once clean. Just touching the kit with your hands will be enough to leave bacteria on it.
 
Okay, I've ordered some PH down and pH strips. A few questions though.
Do I add the pH Down to water or do I add it to premixed chemsan and water solution. What PH level should water be and what level should pre mixed solution be?

As foxy says you only need a smidgen unless you have hard alkaline water
in which case you will need more.
A set of pH strips will tell you when you have acid conditions.

Is it the water I test and add pH down to or the mixed solution? Thanks
 
The chemsan will drop the pH check what it is after you have added the chemsan if it is the same as star san then it should be kept below a pH of 3
 
A ph of 3 or less will inhibit bacteria in its own right even without the sanitiser.

Interestingly orthophosphoric acid tastes rather nice (when well diluted)
 
Another question. Does Sanitizer kill bacteria or just stop it growing? The reason I'm asking is why not just use steriliser? Also I have some washed wine bottles. Will these need washing again then sanitising or can I just sanitise them when I'm ready for bottling?

Also I made the wine on Sunday. However, it's still not bubbling.

According to the IBD (Institute of Brewing and Distilling) definition, a sanitiser will kill bacteria, but not bactrial spores, a steriliser will kill bacteria and bacterial spores.

If you wash bottles or other items in advance, you can spray or partially fill with sanitiser and seal, then when you are ready to go, just shake, pour out excess sanitiser and fill.
 
Bleach is the best way to give bottles that final treatment
Followed by a rinse with sulphite (campden) just before use.

Not only does the campden neutralize bleach (which you really don't want in your wines) but it acts as a second stage sterilizer so win win.
