I don't know the differences, its just something he mentioned, his regular beers go in the smaller FV's.
Bit of trial and error I suppose.
 
Don't get me wrong guys, I am all in favour of big shiny things, heat exchange systems, mechanical sparging et al.
I stick to brewing 5 gal (22.7 ltrs) lots and mash in a plastic buckrt.
This small amount will loose heat rapidly, so many years ago I adopted "Dave line's BBB" floating mash tun.
So simple yet so effective, but not half the fun.
