So I'm brewing a ginger beer at the minute. After a week in primary I siphoned into secondary. Checked the SG, down from 1.045 to 1.015 but there's no visible signs of fermentation, krausen, yeast cake/sludge on botton of FV etc...

What's that all about? I mean it must have fermented otherwise the gravity wouldn't have went down(not as far as expected though) but I'm used to a lot more visible signs when brewing actual beer. :wha:

The colder weather will be slowing fermentation hence the lower than expected drop in SG and the possible reason for the lack of signs of fermentation.

I have made ginger beer (from scratch-no kit) and observed pretty much the same as you. I could be wrong, but I think it is probably something to do with malt not being present like an ale/lager. There was very little trub, no krausen and the surface activity was minimal. However, if I got down for a real close look I could hear a hissing or fizzing sound. The result was fantastic by the way! and I will put another one on soon for summer (if we get one).

I made one last year but it was probably my 3rd ever go at brewing and can't really remember what happened, but it turned out great anyway. Will see what happens to the gravity over the next few days and bottle with crossed fingers

If the gravity is falling then it must be working, so I wouldn't worry. Different brews will look different. When I started my first lager I wasn't convinced it was fermenting but the hydrometer proved otherwise. Obviously a different yeast to ale and ginger ale will be different again.
