Or garlic, olive oil and chives if you want to get all poncey and impress your other half :)

Oh and call it 'Potato Puree' :D

+1 for potato ricer although it is a bit of a faff...

The design of the masher is surprisingly important. My parents' masher is a nightmare of a thing to use - it's basically a long coiled wire, and you cannot get the lumps out. It looks like this.

Mine is the opposite, and every bit as poorly designed: the holes are tiny, and the potato gets stuck so you end up mashing with what is effectively a solid plate. It looks like this.

My uncle's masher is a dream. The holes are about 8mm squares, and I can get a creamy-smooth mash within 60 seconds with it. It looks like this.

Helps to have the right sort of potato too. Best with a "floury" variety like Maris Piper.

+1 for adding milk/butter after mashing.

I have a masher like Tim's uncle and can get good mash with any variety of spud :)

If it's a waxy potatoe I simply boil them another 10 minutes or so to get them softer and break down the cell structure a little more.

I rarely, if ever, add milk to mash now, it's a good dollop of marge, or butter if SWMBO isn't watching my cholestorol, and back to mashing, lovely with liver and onions as we had last night for a treat :)
