Folks -

I'm wondering whether I could split my up and coming brewday by mashing and sparging one evening then boiling, cooling and yeast pitching the next evening.

I know i'd lose the benefit of having hot wort going into the boiler after the sparge, and the boiling process would therefore take longer, but I could live with that.

I'm just worried that leaving the unboiled wort overnight in an FV even with a lid on may not be a good idea.

Any advice would be appreciated, I've searched the forums but not found an answer.

Cheers

Chris

i have had to do it before and the only issue was like u said it takes longer to boil.

some brewers cool over night rather than use chiller that is much more risky.

I have read few stories of wort spoilage during 24hrs storage, even in tightly closed fv. Unhopped wort is very prone to bacteria (wild yeast is not that dangerous in winter).

It's risky but you might be that lucky boy.

its not as bad as that risky boy is bit extreem. the next morning you will be boiling the feck out of it so all nastys will be killed in the boil, im sure you could let it go mouldy, boil the feck out of it then pitch yeast an all will be fine, but thats an experiment ot worth doing. trust me its fine i have done it at least 3 times. some places around the world bottle wort and leave it untill they can sell it as a kind of home brew kit. it has been spoken about on this forum being done by a members local brewery selling their unhopped and hopped wort.

Thanks Shocker - I've been reading up about overnight Mashing and may well give it a go. It's just that at the moment splitting the brewday over consecutive evenings would fit in better with my what my boss calls "work, life balance"... mind you he talks complete cr*p most of the time :D

Set the mash before you leave for work - sparge out and boil etc when you get home ? I dont think the overnight theory has to include actual darkness
