Hi mac1611. Welcome.
I too woke up on 3rd day of red foam everywhere and airlock full of gunk. Cleared it out and carried on as per instruction. Then left for a further 2 days so 7 days fermenting. Still bubbling now on day seven so have gone ahead and followed instruction. Although did do a hydrometer check and it said wine was medium so followd instruction for next faze. I'll either end up with red wine or viniger. Lol. Mine was left in a place where temp not regular ish. About 20c to 22c. ( depends if wife cold or not. Lol. )
Not sure if temp is a affect or not. Hope your brew turns out ok. 👍🍻
