Hi All,

Need a bit of help, i am trying a new recipe and its slowed down but I'm worried.

I made up a brew using 2L of white grape juice and a bottle of strawberry syrup added 1 Kg of sugar and some tannin.

I pitched in Youngs `Super` Yeast as the SG was 1124 aiming to stop it at 1010 for a sweet wine IRO 15%.

The problem is it has slowed right down and the gravity has been 1040 for a week now!!

Will it continue slowly or has it reached its Max? by my calculations it only IRO 11% at the mo and its still far to sweet to drink! I have racked it today and its been going just ofer a month.

Any ideas??

That's a lot of sugar for the yeasties to munch on, it's possible it is a lack of nutrients that has slowed the fermentation.
That'd be my first "remedy" a dose of nutrient a little shake and wait 24 hours to see if there is any difference.

I added nutrient at the start, doesn't the super yeast have it in too?

I mught add a bit more tho. How much?
