Ive gone for a Connoseur Chardonnay (5 gal), a Butlers Sherry (1 gal) and a Butlers Port (1 gal)

Thought id see what they were like for Xmas.

Also thinking of trying my first turbo cider.
 
I have done a Connoser Pinot Grigio, followed the instructions to the letter, It finished fermenting realy quickly 8-10 days, by day 13 it had almosed cleared itself- before the finings were added.
2 month old now should be ready for x-mas
 
Isn't that a little fast? White wines are best after 12 months, reds after 24. The higher the alcohol content the longer maturing period is required. So maybe for next Christmas guys.
 
Why not save some of the batch for next year and drink the rest? Then you can make a new batch next year (if you like it this year) and do a taste test, matured Vs unmatured. Would love to hear the results (if you remember in 16 months)
