I thought I'd jon the club. here's my effort
Interestingly, my recipe called for no rusk/oat/breadcrumbs/etc and was apparently an Italian blend. Ingredients were :
Pork
Pork fat
Sherry
Sherry vinegar
Salt/pepper/sugar
Fennel seeds
Nutmeg
Parsley
Garlic
Scotch bonnet chilli (not in recipe but I put 2 in)
Here goes!
Chopping
All chopped up
Pork marinating
First pass
Added herbs, etc
Second pass done
HOG!
All done!
Test fry - tastes amazing
