Looks lovely. Blimey that fermentation was quick. What temp did you have it at?

Matt.

Oh I'm waaaaay ahead of you...had this bad baby bulk-aging in some old 2ltr scrimpy bottles...

It's bottles I don't have! Neither the space nor the money to buy a ton of bottles and keep them...

You can use water bottles, drill a 9mm hole in the cap for an airlock or a 28mm one for a bung and airlock, i use 1.5 litre pop bottles to store the wine, they are OK short term but not if you intend to age the wine for many months.

This would be an ideal wine to try my "float" method of separating juice from gunge.
I pour the juice from the box into a 2 litre plastic bottle (the kind you get fizzy water from in the supermarket) Top up with water and add a pinch of yeast. 24 hours later all the solid content will have floated up to the top in a solid layer.
Then place the bottle in a large bowl, loosen the cap and prick a small hole near the bottom of the bottle with a dart/bradawl or similar. The near clear juice will run out and the wad of gunge slowly descends down the bottle. When it gets to the hole put your finger over it and chuck the bottle away. You will then have a bowl of clear juice extract to add to your other ingredients in the demijohn.

Why go to all that trouble to spoil the wine, you need all that gunge, make the wine to moleys instructions below and it will turn out fine.

Matt.

He started it on Oct 07 so its been a while, mine usually takes 7 - 10 days (i use youngs super wine yeast compound) plus 7 days for the yeast to clean up after itself then a couple of days for Kwik clear to do its thing.

What temperature do you aim for Chippy?

Matt

Last winter was my first since starting home brew and i was a little concerned when i saw the thermometer getting down to 15c in the kitchen, i then read in the forum that the longer the wine ferments the better it turns out wine so i now don't bother about it, the thermometer on my bucket always reads a couple of degrees higher and i have never had a WOW stop early.

The less gunge the cleaner tasting the wine will be, its just an easy way to get clear juice.

I have never read in the forum that removing the ingredients before the wine has finished fermenting is the best way to make it, if thats what you prefer to do fine but I would hate to think anyone new to wine making would read your post and think this is the best way to make wine.

It actually took a week, if you can believe that! I started it on a saturday, sampled it the next Sat, and it had dropped to 0.991!!!!
I left it in secondary for a couple of weeks, then racked it, stabilised and fined it and left it to bulk age. been taking the odd sneaky glass which I regret now as the flavour is REALLY starting to pop out. Incredibly impressed with this as a wine...
Will definitely be making another once I have a DJ free....not gonna mess around with the plastic ones. If i get that desperate to have another on, I'll buy another glass one, they're only £7..
