Well I finally got all my bits and bobs together for sausage making. And today seemed as good a day as any, so I dove in feet first. As I'm in Cumbria the first home made sausage had to be a Cumberland. So after chopping and mincing and soaking, the end result at least looked like sausages. I guess the real test will be the eating and that comes later for tea. OH is busy as I speak making onion gravy and mash. Can't wait. :lick: :lick;

So this was my recipe:
Pork Shoulder 1kg/Pork belly 350g 80%
Rusk 140g
Spice mix 50g
Ale 140ml
Total 1650g
2m hog casing

Where did you buy the machine? my dad was thinking about doing his own..

The mincer/sausage machine came from Lakeland. Worked great. It only came with one sausage horn which is great for normal bangers but I might try to get a few different ones to do different thickness of sausage. But all in all it was easy to do and the machine worked great. I did have to shove in some bread to push out the last of the meat, but I guess you need to do that with all machines.

Well the proof is in the eating as they say, and they tasted great. Very sagey, and needed more pepper/mace for my taste but all in all a good start. OH loved em and even the dog gave a tails up wag after trying a bit.

Sausages are, in my opinion the tastiest food you can ever eat.

Up the ante though and instead of using rusk, use breadcrumb made with homemade bread.

I have my own butchers , so make sausages all day!

Generally I use 1% salt w/w Pork

A nice recipe we do involves doing a coarse grind adding whole fennel seed, garlic and chilli with 1% sugar (no breadcrumb) and grinding again to make an Italian banger

I love making home made sausages. Plus you don't have to restrict yourself to pork / beef. I make a Thai-style, with chicken, lemon grass, chilli, ginger, garlic and coriander.

But you can't beat a classic banger with mash and gravy :cheers:
