I mentioned to my wife that I fancied having a go at making a spiced beer for Christmas this year and she suggested adding some of this to the brew pot:

I've used it for mulled wine and it tastes great so I figure on using about 250ml in a 15L batch as a direct replacement for malt extract would be nice.

Anyone tried anything similar? Would it work??

I'm pretty sure I've used that exact syrup and it turned out OK. Put it in for the last 15 mins of the boil IIRC, can't remember the amount I used though. Sorry.

Remember you'll lose all the sweetness so it won't have exactly the same effect as when you use it in mulled wine.

^^ Yep. Plus, fermented ingredients taste different to ingredients you add in secondary/the glass/etc. More than anything, it will affect the colour - which isn't a bad thing.

My suggestion to you is to brew up a nice christmas ale - something quite hearty, like a newkie brown - and add some in now, some into the glass when you drink it - you'll get primary colour and flavour, and secondary colour and flavour. I plan to do the same thing to make a Fruli - make a normal wheat beer and supply strawberry syrup to add in the glass. To have it ready for winter you'll want to get it on asap...
