They assist in the coagulation of proteins that forms the hot break, but a good rolling boil for 90 minutes with a hop addition will give you clear beer :thumb:

WHEN IT STATES - 25g after heat off, what does that mean?

That's a matter of taste. I leave mine 20-30 minutes. Some people differ.
 
Did you get a thermometer?? I'm going to purchase this £4.88 Measures temperatures up to 130°C/266°F. The cord is heat-resistant up to 220°C/428°F, and it doubles as a timer! :thumb:

I bought one of them and it told me that my boiling water (dip it in the boiling kettle) was 104c whereas the two digital ones I have gave me 99.6c and 100.4c. Maybe the Youngs one will be close enough at the desired temperatures and maybe you got a more accurate one than I did (or my two digital ones are out). There are variations to boiling temperature based on altitude and stuff but I'll leave some p***k from another forum to explain that. :evil: Sorry, ignore that....
