Giving this a go as well. I used your recipe more or less. Ratios seem a lot better than the video.
I forgot to factor in the cold weather here so it’s a slow fermentation. SG went from 1.080 to 1.052 in a week.
tastes very sweet still but otherwise pretty good.
Keen to taste the final product.
