Mine's been bottled 4 weeks today and is really quite good. I did brew it short though.

Ah well, had the same problem with the Wherry every weekend I go back home it gets better and better....don't think it will last through christmas though. My own fault, spent too much time with the wine. Let's hope it's worth the wait...

well four weeks on and the Black Pearl is still slowly fermenting, It's now down to 1016 but bubbling away at a rate of about 4 glugs a minute.... Gonna hang in there for another week and will then keg it and give it a month....maybe ready for next Xmas. As I have read from you guys it is a waiting game, which explains why my Wherry after 7 weeks in the keg is now delicious....Gonna start on the Admiral Reserve now.....
