May blossom wine

With spring just around the corner I thought it would be a good time to remind forum members that a really overlooked wine is May blossom or Hawthorn blossom wine. I have made this two times in the past and it has never disappointed me, nothing much happens in the bucket until day 3 to 4 when the newly formed alcohol starts to leach out the nectar from the flowers, pure magic, cheers Dave
