Hi,

Just walked into the kitchen to see my Mango WOW coming out the top of the airlock. Fermentation seemed steady so earlier i added another litre of mango juice to top up to the gallon and it seems to have sent things mad!

I have taken the airlock off and stood it in the sink for now, will the layer of co2 protect it overnight? Hopefully it will have calmed down in the morning and I can put the airlock on again before work.

Only other time this has happened was with Lychee cider and that was just with the first litre of Lychee juice!
 
My suggestion would be to empty it out to the shoulder, add mitabisulphate and make a new starter to add tomorrow, leaving the airlock on overnight.

However this is a (somewhat) educated guess.
 
When I get one that escapes (last one was strawberry) I tend to just wash out the lock once or twice a day until it settles.
I figure as long as it's pushing stuff out, nothing's getting in, and the brief period where I wash the lock it will be protected by its CO2 layer.
Seems to have worked for the strawberry, judging from the taste when I racked it.

It is back under airlock but is still chucking stuff out, although a lot slower and mainly bubbles of gunky foam. Hopefully it is back to normal in the morning as working away for a couple of days. No chance of the wife helping will just get a massive ear bending friday evening! :?
 
I'm guessing the problem is largely down to the amount of pulp from the mango - the reason my strawberry did i was that I just put it through a sieve instead of muslin, when it went from bucket to demi. I suggest if you make it again you strain the stuff properly either before you start or between bucket and demi.
