I have never brewed anything except coffee.
I am living in Thailand and have a loads of lychee trees and mangos. So I was planning on making a lychee cider and a mango cider and wine. . I found a wine recipe I like to try but I have no idea how to make a lychee cider I can not find much info for lychee and for mango they use mainly apples in the recipes I find and I can not get hold of good apples. Any other fruit I can mix it with or would it be fine with only mangos? Maybe I can mix in a unripe mango that has little more acidity but still have nice flavor? Any one that can point me in the right direction?
