Low final gravity

Hah, I thought I'd never worry about this one! I've made a hop-focused ale with pale malt, 20% wheat malt and 5% Munich malt. Original gravity was a bit low, around 1.045 (I was expecting around 1.048)... but, final gravity is around 1.008 and still dropping. Somehow the US-05 is doing a good job munching this one away.

Question... should I ever worry it's going to end up too dry and alcoholic? :party:
 
US-05 is a monster. Don't worry! It will be dry but it'll be lovely and refreshing for the summer! :thumb:
 
also it's got a lot to do with what temp you mashed at , such as 62/64c i would expect it be dry and ferment low while mashing at 68/72c will give you sweeter beer with more body etc . What temp did you mash at ?
 
Can't control my mash very well, just doing it on the hob and when I reach 62-63c I stick it in a preheated (but turned off) oven, so it's lucky dip!

That's a pretty low mash temp. Guessing you don't mean you heat the water to 62-63 and then add the grains? That would drop the temperature even lower.

Lots of people brew good beer without getting too concerned about the numbers though, so if you enjoy the results then it's all good :)
