More or less indefinitely. If condensation gets in then you will get mold growth.

I actually prefer to freeze it, the crazy thing is that due to the high gravity it never sets like toffee, it just gets even more viscous.
 
As a high risk food product, I would only store in the fridge for 3-4 days. Youve got everything in LME to allow bacteria to grow. Freezing is your best option and I would recommend that you boil it for at least 3 mins before use.
