.. that for whatever reason, you hadn't brewed for a couple of years and you have the opportunity to brew this weekend... what would you brew?

For me it's a high-hop (65 IBU+) IPA. I'll edit this and post the recipe a little later.
 
Something low OG and quick to condition probably a wheat beer or stout as I could be :drink:ing it within 14days, :D

Then I would put on the IPA the day or week after, time permitting, as I would have something to keep me away from the IPA while it was maturing :grin:

What else is there that has a quick maturing time ? Please tell me as I'm growing impatient with some of my Belgian ales and pilsners! :cheers:
