Hi. I would appreciate any advice. I started off a Milestone twin-kit brew 11 days ago and it started fermenting the next day. I put in the two 1.5 kilo cans of malt extract and the total volume of liquid in the wort was 4 gallons, which gave a starting OG of 1050. The big, foamy head dissipated several days ago and the surface is now covered by a layer of bubbles. I observed the surface for about 30 seconds and small bubbles are still rising. I would like the wort to get down to about 1010. The ferment is clearly less vigorous now that the foamy head has gone and I am not sure if it will get down close to 1010. How long would a ferment of this volume take to complete- could it go on foe 2 or 3 weeks? If so, how often should I check the OG? I am using a plastic Young's 5-Gallon fermenting bucket.
 
Thank you. I have another question. I have a twin- can LME kit. Somebody told me that I should boil the malt before I add it to the ferementer. Is there any advantage to brewing it?
