Leftover ingredients, what shall i brew?

I have a lot of odds and ends of grains that i could use what could i make out of them, any unusual or interesting ideas?

i have
Lots of maris otter
chocolate malt
roasted barley
carafa special I
crystal malt
Tiny bit of munich malt
Small amount of pilsner malt

I havnt weighed any of them but have decent amounts of all of them apart from the last 2. Any ideas? Ive mainly done clone recipes so far so not too experienced making my own. Cheers
 
I doubt this counts as interesting or special, but motter, chocolate, roasted barley and crystal looks like the basis for a good stout (or maybe a porter). Get some supermarket oats and you've got a decent oatmeal stout?

What hops have you got? If they're Goldings, Fuggles etc I think I'd be going in that direction.

If you've got lots of US hops, maybe a black IPA? Carafa is great for these - you get the colour without too much roasty flavour. I use Carafa Special III for mine, so I'm guessing you'd need a fair amount of Carafa I. Happy to pass on my black IPA recipe (I've only made it once though!)
 
Havnt got any hops, black ipa sounds good. The grains are left over mainly from a stout and a schwartzbier and ive just done a stout mashkit so would rather not do a stout again yet, unless it was a weird and wonderful brew or something that needs a heap of ageing.

35.0 g Northern Brewer Leaf (9% Alpha) @ 60 Minutes (Boil) (1.7 g/L)
20.0 g Cascade Leaf (6.8% Alpha) @ 10 Minutes (Boil) (1 g/L)
30.0 g Northern Brewer Leaf (9% Alpha) @ 10 Minutes (Boil) (1.5 g/L)
40.0 g Cascade Leaf (6.8% Alpha) @ 0 Minutes (Aroma) (2 g/L)
40.0 g Cascade Leaf (6.8% Alpha) @ 7 Days (Dry Hop) (2 g/L)

You don't really need the wheat malt, and you'll need to adjust for the colour of the crystal and Carafa I vs Carafa III. When I brew this again I'll go for slightly more late hop additions.
 
Looks good, how much carafa I would i need to use to substitute it for carafa III? Or could i add some roasted barley for colour?
