Does anyone know whether the pronounced taste of cloves in Leffe comes from the yeast or do they add cloves in the boil?. Also if it is the yeast which is the best strain to use?
 
It comes from the yeast. Some Belgian stains produce more, some less. Chimay is on the higher side, Rochefort on lower.
