I finally got around to doing a Le Chouffe clone. Also my first proper semi AG brew, if that's a thing?!
My pot is only 17 litres so it was full to the brim during the boil.
I used 2kg Pilsner Malt, 2kg lager malt, 150g wheat malt. Mashed at 65c for 1 hour in a coolbox. Sparged until the pot was pretty full then boiled for an hour. Added 25g each of Saaz & Styrian Goldings at 60 mins. 1 protoflock tablet and 20g of crushed corriander seeds with 10 mins to go.
As I wanted 22ish litres I also added 1/12 kg of candi sugar and 1 kg of DME at the end of the boil.
Strained into the FV (what a pain!), topped up to 22 litres and took an OG of 1.068 which should be in the 8% ball park.
Pitched MJ M29 yeast at 24c and that was that. Took the best part of 4 hours!
Really impressed with my homemade wort cooler, really did the job and boy is it shiny now!

Hopefully it'll be something close to Le Chouffe or at least something tasty!
 
The pitching temperature is a bit high in my humble opinion, do you have it in a fridge to keep it below 24C?
