Bought on of these on spec when I was in my brew shop this morning, anyone made this one .

This is presumably what they formerly called valpolicella, which, is a protected regional name, not a grape variety, which is why the chianti version is called cantia.
I haven't tried this one, because I don't rate valpolicella very much.
 
started this at the weekend, supposed to take about 4 weeks, but what a lot of messing about it will be....

following the instructions to the letter it says that it needs to be racked three times, my technique is pretty crap so I'll expect to lose a bit of volume each time, although I'll be trying harder with this one

It also says to use a filter at the final racking stage (pre bottling), a filter wasn't mentioned in the kit requirements though, anyone think this is essential ?
 
I rarely if ever get my filter out for anything less than a 30 bottle kit.
Kits will generally clear by themselves if you rack and leave them long enough.

Wows with added fruit and country wines are of course a whole different matter.
