I currently have two brews on, the infamous Wherry and St Peters Ruby Red. Both started on 04 Aug, both are finished, and have been sitting at 1.014 for about 4 days.

Shold I rack into a secondary and bottle straight away (like I did with my cider), or should I rack off and leave it for another couple of weeks?

My only concern with leaving it another couple of weeks, is that the temps are fluctuating a bit at the moment, and we are currently going into another warm phase.

Thanks :)

Oh, both taste good already, can't wait to taste the final outcome... nearer to Christmas!

My last and first brew of St.Peters I bottled after 7 days. It should have been racked into a 2nd vessel. Although dropping a big sediment during fermentation it went on to drop a lot more out while in the bottle.
In its favour after dropping a second deposit in the bottle it cleared brilliantly and although a big deposit formed it was hard and didn't move during pouring.
I would suggest you rack into a second vessel and leave a further week or so, if the weather remains warm or even gets warmer I would drape some wet towels across. It will make the bottled beer more " presentable " and deposit free.
And its a brilliant drink ! My second brew of it started yesterday

Personally I'd bottle it now if the SG hasn't moved for 4 days, but if you want to put it in a secondary and leave another few days, there's nothing to say you shouldn't do that, just be thorough with your sanitizing :thumb:
