I got a few brews ready for Christmas and one in the FV but fancy a wheat beer and believe they're quick conditioning.

I've got a load of ingredients but no wheat extract so can anyone answer the following;

1. Can I make a decent wheat extract brew with light or dark DME (I bought quite a bit last time round).

2. I have a 10litre pan. Is it possible to do a BIAB in a pan this size without using DME?
 
Sorry, should have been a little clearer - I've got a few kilos of crushed wheat malt and was hoping to use that.
 
not sure , the wheat malt needs barley to help convert the starch to sugars , a maximum of 70% wheat is recommended in a mash with barley making up at least 30% . You can mash with wheat only but you need to do a lot of messing around and may get poor results anyway . You could get some barley and mash with the wheat then add the dme to the wort collected after mashing . You'll need to steep the grains for at least 60 mins to extract the sugars .

What's the point of malting the wheat? :wha:

wheat malt will convert itself fine. actually some has got a higher diatastic power than 6-row barley..

hows about a 100% wheat BIAB? :D
