I keg my kit made beers. Generally, the first pint drawn off is excellent and has that 'to die for taste'. The second and third pint is just as good. Say, a couple of days later, I draw off a pint - it's okay to good, but not a patch on above-mentioned pints.

Carbonation is still fine. Maybe the palate can change, but I don't know. Any comments appreciated. Perhaps it's all in the mind!

I have noticed similar with my AG beers (and commercial beers). They taste different on different days.
As you say sometimes they are superb and another day they are average.
I am of the opinion that the beer remains the same and our perception (palette varies). Sometimes dependant on what you have drunk or eaten before sampling the beer (even another style of beer)
 
I get something similar with my AG bottles! Some bottles seem better than others. Not all bottles are born equal. Probably mostly down to perception, beer serving temperature, how we are feeling, whether we have eaten or are eating etc. But maybe a little to how each bottle carbonates and conditions? With keg, most of the above applies, but the beer will also be changing from day to day to a small extent. We know how different a brew can be after 2 or 3 months.

yep,ive always thought that,the farther down the keg you go the product isn't as good,still quaffable but certainly different.although I only find this with plastic KKs and don't get this with my cornie,the beer holds its quality to the last drop
 
Id go along with the palette theory as I made a Burton bridge porter, the first mouthful had a strange but not nasty aroma and taste, unless you were having it with food when it tasted fine.

Bottles generally get better the longer you keep them. One of the reasons I bottle. :thumb:
