For my first AG brew I didn't have any protofloc tablets, but told myself I'd go ahead without, and get some for the second, but after reading about it seems that Irish Moss is used for the same purpose (binding the protein to result in clearer wort, is that right?). So, which is best and why?

It's well worth using one or the other, it is just a matter of personal preference. Irish Moss is just a seaweed in its natural form and protofloc is a blend of seaweeds processed into a tablet. I've always used Irish Moss and never had any problems, I just rehydrate a teaspoon in warm water and add it to the boil 15mins before the end, I understand that half a Protofloc tablet is the equivalent for a 23L brew length.

They are both fining agents using negatively charged molecules to attract the positively charged protein molecules, which then settle out because they are heavier, thus giving you a clearer beer.
