I have brewed an IPA which is now in the maturation tank, had a taste and it has a nice citrus / grapefruit flavour but it is a bit sharp. Any ideas on adding some sweetness?

Lots of ways to add sweetness if really needed, Lactose, artificial sweetener or time as is suggested.
I would leave it a few weeks to a month and retry it if it has not mellowed enough then add some Lactose but be careful as it creates massive nucleation points on carbonated beer and it can do a Mento's moment.
 
CO2 also massively changes the flavour. Min a month conditioning for a strong / hoppy beer anyway. I started drinking my NEIPA straight after kegging as fresh is best for NEIPA. Three weeks later and it's a different beast and much better.
 
I have been doing this for quite a while adding 2ml of lactic with the dry hop and no scientific experimental proof but in my mind it seems to help, more flavour and less bitterness
