Another dimension, another dimension. It was all Galaxy for yesterdays brew. Working my way through my stocks of DME before I take delivery of 25Kg of MO and move over to the darkside. Wanted something pale and hoppy, so went for an all Galaxy pale ale with a bit of caramalt and carapils. First time using Galaxy - they smell great.
~13L SG 1.043.

Life's too short for beer labels! This one will simply have the letter G on the cap in felt tip.
 
Bottled today. Dry hopped with 20g Galaxy in primary after 12 days, then left weighed down in a muslin bag for 10 days. Final gravity 1.008 which gives 4.6%. Batch primed with 60g sugar which should give 2.2 volumes of CO2. Ended up with 11.5L bottled. It smells fantastic and the trial jar sample was very tasty indeed. I'll leave them in the house to prime for a week or so, then into the cellar.

I've read that Galaxy can be a harsh bittering hop but some people absolutely rave about it.
I've a Galaxy/Citra IPA currently dry hopping which I'll tranfer to a PB this weekend.
Mine should work out to 6.0% with 60 IBUs :oops:
 
Apologies, I intended to post an update a week or so ago, took a photo of the first pint but forgot to comment on it.
What can I say? It's a right Bobby Dazzler. Carbonation was spot on, taste and aroma amazing. Not quite as outrageously tropical fruity as my previous all-citra brew - I prefer the galaxy. I didn't find the bittering to be a problem, just right for my tastes, but I think I was fairly restrained. My new favourite hop; step aside citra. I'll certainly make this again. I have one lot of barley DME to use up before going AG, where I will use up some of my hops. I'll use the same recipe as this, but maybe try a citra/galaxy combo (perhaps some cascade?) to finish off the current supplies. I'll certainly be going for another all galaxy some time in the future, using the same recipe but substituting DME for MO when I go AG.
The pint in the photo makes the beer look pretty murky; however, it is nice and clear, it was just taken from a very cold porch so there is a lot of condensation on the glass and a bit of chill haze. The couple I've had since were at a more sensible temperature and were much brighter.
The head wasn't really that big, I thought I'd try out a pocket beer engine on it (it didn't need it). I should leave the Calpol syringes well alone.
A rip-roaring success.
 
That looks great and is along the lines of what I'm hoping to go for next, tried Kona's Big Wave golden ale which is hopped with galaxy and citra yesterday and it was great so I reckon you're onto a winner. Hope mine turns out looking as good as yours :cheers:
 
Had a couple more of these at the weekend. Not quite crystal clear, but not far off if you can pour without rousing the US-05. This really is a cracking beer.
