I've been brewing since about 2004 when I made lots of kit beers, not made any of them in a bit. I usually make beer from grains a couple of times a year and usually have several fruit/flower/country wines on the go. I've made some properly rancid stuff in my time and rarely have I known what's gone wrong, nowadays virtually everything I make is drinkable (that may say more about me than my wine!) and much of it is really quite nice. I've used a lot of CJ Berry recipes and even older country wine recipes (after reducing the sugar, I've got one that recommends 4lbs of brown sugar /gal)
I came across this forum while looking for a recipe and thought I'd sign up to get a better idea of what I'm doing right or wrong.
