Hello gents and ladies.
So September is here and Berry picking started.... I got a bag of elderberrys today so rushed home and threw on a brew, elderberry and apple.

Isn't it wonderful what the seasons give us.
 
My old man was a keen wine maker, he was always taking me down the railtrack to get the best elderberries! Different times.

One his favourite punishment's was also to give my two sisters and myself a black bin liner and tell us not to do e back until it was full of dandelion flowers!
 
I have been hunting the blasted things for 2 weeks now. Need 8kg, only have 4kg (and 500g of that is blackberries). Dublin based. Hard to harvest the blighters.
 
Have had blackberries comming outa our ears here:lol:. Have done a blackberry stout ,have a blackberry brandy on the go,a freezer stuffed with em and far too many crumbles:):thumb:

Dare I ask where I should be looking ?

I think you will find most are now going over. Our daughter lives at epsom and she got them from there. Our's at the bottom of our garden have been poor this year, plenty of mad growth, few berries though!.

What was your recipe ? I'm a newbie and want to take advantage of the seasons fruits !

It was simple enough,

Half a bag of elderberrys and 1.5 ltr apple juice.
Yeast nutrient
Citric acid
Pectolase
And 3 drops of vanilla extract.

Its an amazing colour... Blood red.

I can imagine it not been easy to find much of them in atha cliath.

I'm in the Yorkshire countryside so they are everywhere.

I was looking for sloe but none around me, that be a lovely mix...
Good look with your foraging , let us know when you get a nice wine on

I used to love making Elderberry & Runner Bean in 5 gallon batches. To secure a supply, I even planted a couple of elderberry trees at the bottom of the garden..! Plain elderberry is a good red, but add runner beans and you have a smooooth full bodied completely different wine. Delicious..!

But, my liver won't let me drink red wine any more....:-(

(2 & 1/4 lbs elderberries to 1 lb stringy old runner beans per gallon)
 
So that failed!!!

Decided to put in the bottle cupboard.... Way too cold and killed it.

So onto round 2 now....
