How much yeast to use?

i am making some cider. I have the apples and a packet of champagne yeast. Now the packet says it will do for up to 23L, but I might not have enough apples for that. If I have 10L of juice, do I use half the packet or all of it. Can you have too much yeast?
 
G’Day Shaun, my short answer is no, I always over-pitch by a factor of 2,3,&4 depending on the wort type and Og but you get to a point where you’re just wasting money. I have read there is a reason not to over-pitch?? but my taste buds say otherwise. Now under-pitching is another can of worms altogether… Cheers
