How long should I condition my beer for?

I'm sure I came across a rule of thumb for how long to condition beer for, and I'm sure it was on this forum, but can't seem to find it...
Does anyone know about this? Would much appreciate any info!

I tend to find my beers are best after about 6 months in the bottle though. I always regret drinking the last one as it is so good and wish I had started drinking the batch then.
 
It's difficult to wait, but worth it, I keep a decent stock these days and find it really is worth the wait, I've some (not many) that are over a year old and really are very good indeed :thumb:

:oops: still try the odd bottle of recent brews though, just to make sure they're ok you understand, see how they're coming along :whistle: :geek:
 
So its safe to leave a fairly low alcohol ale 3% - 5% for a year? What kinds of ales are best left longer? I leave my IPA's for about a month but will try harder to leave longer! I find that the first initial taste is great but there isn't as much depth, its kind of peters out... Would longer conditioning help this?
 
+1 to the .0010 for a week!

I cracked a keg the other month and it was pretty good. Left it a week and it was amazing. Wish I had waited and had it later :(

Having a back log of beer conditioning is the only way!

I have got a barley wine 9 months old which I don't suppose will reach peak condition for at least another year. :thumb:

+1. And even the APA I made about a year ago that I initially didn't think much of has aged gracefully.

Is it just me or does S-04 have a sort of homebrew twang for a few weeks after bottling? Seems like that to me but with some aging it becomes just about indistinguishable.

To be honest I have allways found S04 is pretty drinkable a week after fermentation to be it tastes alot like many of the local microbrewerys in Stockport way.... :hmm:

Improves with age.
