got 2 fermenting at mo and cooling as we speak another 31 litres

i am too running low only have about 120 bottles drinkable at mo

It's just a case of brewing more than you can drink for a while. I have made 10 gallons of beer for the last 3 weekends running as stocks were getting low. Now looking much healthier ready for the next bit of work updating the brewery a bit next weekend hopefully.

I used 2 FVs for 14 day fermentations. This way I could brew once a week for a good few weeks. That gave me a sufficient stock so I never need to buy bottled beer. I just have to keep plugging away now to keep stock up

I've also got straining shelves :D

These are 35L "Really Useful Storage Boxes" which were on offer in Homebase a while back, each is tall enough to take most 500ml bottles I've tried, and holds 20 bottles. So I've always got a stash of 80 in the garage at any one time, plus some in the house ready to drink, plus of course any in the barrel.

Most brews I bottle at least 25%, often 50%, and this has enabled me to get a stash built up - some bottles in there are over 6 months old

Just wish I could do the same with the barrels, but I seem to get some many issues with them that they aren't fire 'n forget e.g. too much pressure and the tap leaks, leaky seal so no pressure. Consequently I find myself keep checking them, and in doing so having a crafty ones...and soon the beer is gone ;)

As others have said the key is to brew more than you drink. I now have a stash of about 3-400 500ml bottles and probably 250 330ml strong beers. Some are over a year old and the youngest is probably 3 months and I haven't really started on those yet.

AG definitely improves with age. I have a bitter I made last year and was never overly happy with it. So much so I brewed another batch and left the remaining 20 bottles. Woow they are now wonderful wish I had the whole 120 bottles of it.

I'm planning on doing 5 gallons of AG per week for the foreseeable future to really get my stocks up. Only thing is I have limited space.

I have two rusty old sheds, But with the winter coming, will the beer suffer badly when it drops below freezing? Will they freeze? They will be sheltered from the elements But these sheds aren't insulated!

coming back from working abroad for last 16mths or so, i have NOTHING stashed
so need to clear space, find and clean everything Twice, then get a couple kits on whilst i tidy the garage
so i can brew properly

then i suppose Christmas will be good but in the mean time it will be shop bought stuff ;(

Restrain myself on the amount i buy of those is harder.

As an absolute beginner, I think I'm just going to have to keep brewing and brewing for a bit, though commercial beers will allow me to build up empty bottle stocks as well. I've started with a Wherry and will go straight on to a St Peters Ruby Red. After that, I'm looking to mix in some of the kits that benefit from much longer conditioning so that I have some variety to look forward to further down the line. I suspect I'll want to move on to extract brewing fairly soon so I don't want to fill the shed up too much!
