How do I kno if a brew has gone 'off'?

Hi, i brewed up at the weekend, however realised i had no yeast, i had to pitch yeast from a wherry kit 24 hours after the brew finished (I usually us S-04)

On testing gravity, i usually have a little taste (naughty i know), this brew tastes completely different to the usual taste, almost tastes grapefruity.

Has the brew become infected, or is it just a different yeast giving a diffrerent characteristic??

I really am no expert and not the best person to comment here, but I would guess it's just the different yeast. I do know that some can be more ‘estery’ than others, e.g Windsor, and my own Wherry has got a fruity quality to it.
 
Nothing wrong with a fruity taste - unless it's durian fruit of course! :D
 
If it tastes flat, sour without the bitter and a bit like vinegar, then something has screwed up imo.

However bad brew / vinegar goes well on chips :p
 
You're using cascade, I'd expect that to give a grapefruity taste.

If you've only ever used SO4 before, it's well known to knock out a lot of the hoppiness so a different yeast may leave the taste more pronounced.

Sounds good enough to drink to me :thumb:
 
You know its off when you open the keg to rinse it out after use and find a nice thick layer of mold of the surface of the remaining beer :sick:
