I made a couple of accidental sours a while ago and getting to the bottom of the batch. It would be nice to make a similar beer again using the same yeast in secondary. Would it be possible to culture the wild yeast from the bottle, or would I get a mix of US-05 and wild yeast? Would that matter anyway? I'll be adding the yeast in 2ndry so the saccharomyces would have done its job by then.

You mean culturing up from your own bottles? Sure, I've done it before.

You would get a mix of US-05 and wild yeast but I think over several generations one yeast would take over. So perhaps only repitch one or two generations ro keep the flavour you like (but perhaps not, maybe you may be able to go several gens before an imbalace ocurred

Maybe I just need to leave the lid off my next fermentation and hope for the best!

A man falling from the top of the Empire State Building in New York was heard to say "So far so good!" as he passed the fifteenth floor!:wave:I think that's how I consider "Hoping for the best." when brewing. But then again, I am an optimist!:gulp:
