How do i adjust the Gravity level?

Beer and cider doesn't usually sit on the trub long enough for it to affect the flavour.
Normally I'd expect all that gunk at the top to sink before bottling time comes around, and it's not quite as clear as I'd go for.
Give it another couple of days, at least.
