How cold can you crash ?

I managed to freeze another batch. Should of checked before I bottled it.

That's not a solid block of ice, it's a collection of ice crystals, which tend to form around -2C. Remember that your thermometer is probably out by at least 2C at this temperature and it is easy to see why. BrewDog have a recipe where they intentionally do this in order to increase alcohol content - vodka style.

In answer to your original question I usually cold crash at 2C - my thermometer has been checked against a lab one, but the thermostat does let it get down to nearly 0C, so I don't want to go any lower.
 
I put a small cup of water next to the FV - when this starts to freeze I stop reducing the temp - usually when the STC is set to about -0.4 on my fridge.

Me and you both! Although luckily I only managed to freeze about a 5th of mine. First and last time I'll be doing that... What a numpty
